After the last fried rice recipe I had a reader ask me about a fried rice recipe they had seen on REI’s blog. So I set about to work on the recipe and see if I could work on improving it. I didn’t use freeze dried eggs because I prefer fresh (it’s all the chicken farming this year…what can I say!)

This recipe works well as a one pot creation, but you will need a bowl, or bag, to stash the cooked eggs. Just keep that in mind. The cleanup is easier though, as the eggs don’t get fried onto the pot at the end.

I changed a few things, such as leaving out the salt called for (it isn’t needed) and using broth concentrate instead of dry powder (so much more flavor, and doubling it as well). Coconut aminos have considerably less sodium than soy sauce, but are also gluten free.

Ingredients

In a sandwich bag: 1 cup dried vegetables 1 tsp granulated garlic ½ tsp brown sugar ½ tsp ground ginger In a sandwich bag: 1 cup instant rice Also take: 2 packets coconut aminos or soy sauce Fried onions, if desired 2 large eggs, unwashed or 2 servings favorite dried eggs* 1 packet oil 2 packets broth concentrate


Directions

Add packet oil to a wide/shallow 2 Liter pot, heat over a low flame. crack in the eggs and stir well, scrambling them. Take off the stove when still looking partially soft. Stash in a bowl or clean bag, scraping out pot. Add in 2 cups water to the pot, along with the dried vegetable bag, the broth concentrate and the coconut aminos. Bring to a boil, simmer gently for 5 minutes. Bring back up to a boil, add in the rice, stir well, cover tightly, and turn off the heat. Let sit for 10 minutes. Open up, fluff up rice and stir in eggs. Top with fried onions, if desired, for crunch.

**If you are not into carrying eggs (just wrap them in paper towels, and put into your mug), Ova Easy eggs is my go-to choice for dried. However, connivence doesn’t come cheap. A dozen eggs is more than half the cost of Ova. To find unwashed eggs, find a local chicken keeper or farmer and request them. Eggs can be kept at room temperatures until washed for two weeks. Just rinse eggs off before using, in a stream is fine. Then crack! Otherwise, follow your dried egg packaging on using.
