Any Subaru fans out there? If you are and you have yet to discover Softroadingthewest.com, you’re in for a treat. The guy that runs the site has a ton of well-made videos of his 2012 Forester driving all over the West, tackling off-road trails that most Subarus wouldn’t dream of.

His dedication is such that he built an entire kitchen setup in the back of his rig, one that’s rugged, sophisticated, but that also looks doable for anyone with the tools and the time.

Of course, a logical question: Why bother with all of that when you can just get a table? Well, where’s the fun in that? Overlanding isn’t about efficiency, really. After all the most efficient means of travel overland is with feet (or a bike). There’s a big part of overlanding that’s simply about mods and making something your own.
